Pungency in Onion
1. The pungency in onion is mainly due to the presence of volatile oil allyl propyl disulphide in the bulb.
2. Pungency in onion is also depends upon other factors like –
a) The variety
b) Stage of maturity
c) Type of soil
d) Temperature and moisture condition during growth period.
e) Storage period of the bulb.
3. Storage pungent varieties are preferred for cooking and processing while milk pungent varieties are consumed raw.
